You do know that the so-called "Bioware universe" has been considered canon with only two changes: Revan is canonically male while the exile is canonically female.
That said, since 2003, there has been no difference between the "Star Wars universe" to which Bioware acquired a license to produce KotOR and said "Bioware universe" (term coined by Jake). They are one and the same.
So I don't know why FFG can't go down that path.

Just shooting from the hip here, so please, if I'm mistaken don't.. uhhm... shoot me?

From a storytelling/literature standpoint perhaps they're the same universe. But possibly from a legal standpoint there might be a difference in their contracts.

Well Adrian correctly points out that the intellectual property rights for the characters from the "Bioware Universe" (or rather the Old Republic) may not have been included in the license to FFG.
It is difficult to state without seeing the terms of the license itself as to the scope of the material that FFG can allowably use. So it is entirely possible that FFG cannot go down that path, or that it might be able to.
In any case, even if FFG uses the Old Republic, that does not necessitate that they will use the Bioware created characters, canonical or not.
